Chunky Potato & Broccoli, Cheddar Soup
This hearty chunky soup is one of my all time favorites. I cook it atleast 3 times a month. It tastes absolutely amazing! It is best made in a crockpot. My recipe makes about four servings.
Ingredients (I absolutely never measure ingreadiants I just put in what I think looks and tastes right so add ingredients to your discresion)
I will give approximations though.....
2 cups Milk
3 large Potatos
1/2 a bag of frozen cut broccoli heads
1/2 a box of velveeta cheese
1/2 small onion
few sprinkles pepper
few sprinkles salt
first cube the velveeta put it in the crock pot
pour milk in crock pot
Skin and cube potatoes
put potato cubes and broccoli in a pot add water, boil on the stove until broccoli and potatoes are soft
drain water and add potatoes and broccoli into the crock pot
cut onion and add to crockpot
sprinkle in salt and pepper
let it all cook until the onions are soft remember to stir occasionally
tips-
if too runny--- let sit for longer and stir until it thickens up
If to thick----add more milk
Mix it up-
try adding...
cabbage
shredded cheese
sweet potatoes instead of reg potatoes
cauliflower
different spices
